Depending on your ram, you can go up to OS9, maybe the first version of X. Around there Apple abandoned the 603(x) archtecture for the G architecture. However, you can only go up to 64meg of ram, and the cpu bus speed is only 40MHz, which may leave you waiting for throughput.
