Emu ESI 4000/Peak 2.0 on the powermac ...
sampler, sample editor. peak can interface directly with the sampler over
SCSI (SMDI) allowing unbelievably easy sound editing, stereo sample
slicing (try that, ReCycle...), effects, keymapping, and once you're done
you can master your track with it. best piece of software i (ahem) never
bought. I do plan on purchasing the next major release.
Max/MSP for sound generation and MIDI kontrol ... the possibilities are

Technics 1200 phonograph playa / MPC 3000 sampler, sequencer ...
if i had to start all over again, i would do it with just these two. and
a fucking stack o wax the size of the sears tower
