The hum is coming from the turntable and the computer not sharing a single
ground.
If you take a piece of wire and attach it to your turntable ground, and
screw it down to a screw on your computer case, the hum should disappear.

Adaptec's EZ CD Creator 4 has a nice labeling system, as well as tons of
options, include direct MP3 to CDR recording, fade-in fade-out, track
crossovers, etc..
