You can get many laptops retrofitted with touchscreens, and also LCD/CRT screens which are either standalone or raw (you mount the screen in your chassis, for instance if you were making a kiosk). I've seen touchscreen-fitted powerbooks and ibooks. The damage for, say, a 12.1" active matrix LCD screen with a serial or USB interface is over a grand US$ - not cheap, but the effect is very nice. There are a variety of methods used for touch screens: capacitive, resistive, surface-wave, etc. We've had the best luck with the surface-wave gear: very responsive and doesn't drift. You can poke at these things with your finger all day and they're still nice and snappy. We go with www.elotouch.com.
