Winamp (and other mp3 players) will allow you to write wav files.
Set the output plugin in the preferences to "disk writer".
For CD ripping (and mp3 encoding), the good software is commercial. I
guess you'll need to disregard some more ethical issues.
That said, Audiocatalyst is very nice.
