Take a closer look at Salvation, particularly the flash demos. Salvation
reminds me a lot of Plogue Bidule -- modular and capable without being
overtly complex.

That being said, Max/MSP/Jitter is not as complex and unapproachable as
most people make it out to be. It just requires a bit more reading and
a bit more planning (disclaimer: I work for Cycling 74 so I'm a wee bit
biased).
