If I recall correctly, high frequencies propagate more quickly through a metal spring than low frequencies. When the vibrations of the instrument travel down the springs and resonate against those metal plates, it creates a fairly unique sounding reverb-esque effect. A single impulse will create a "pew" kind of sound, as the higher frequencies arrive first. The spring/plate combos are essentially a pair of weird, physical all-pass filters. All-pass filters are an essential component of many reverb effects/plugins. It's how the blaster sounds in Star Wars were created: https://www.youtube.com/watch?v=HtUGYKjG09g It does sound pretty unreal though.
