Supercollider is a great Mac app along the lines of CSound. Very FM-y
sounds. max/msp of course. Reactor will run on pc and mac. Not sure of the
pc version, but you need a well powered Mac to run it. Great app though.
You can set up your own instruments, effects and sequencers like max/msp but
the front end is friendlier IMHO.
Thonk is fun if you are running a mac as is GrainWave. Both are use granular
synthesis.
I use these all a lot, but to be honest I always end up going back to the
hardware as opposed to the software in the end.
