Try out a few demos if you haven't already, and see what you like best.
Some music software has a more oldskool tracker like interface (Fruity
Loops, Renoise) and some have a more machine like orientation like Reason.
It depends on what you're looking for, or feel comfy with.
Check out Ableton live as well. It rocks, but ain't cheap.
I use freeware oldskool Jeskola Buzz btw, but I wouldn't recommend it unless
you're a geek.
If you really want to get experimental you can give PureData, MaxDSP or
Chuck a try, but that's more über-geekish music programming instead of
composing IMO.
