It changes the aesthetics of the release. Take a look at Jake Mandell's "Placekick", Kid606's "Soccer Girl" and Kit Clayton/Safety Scissors's "Ping-Pong" EPs on Carpark. They designed the art to print past the recordable edges; it makes the football/soccerball/ping-pong ball look like they're floating on the disc. If they used a regular 5" disc, it would look like it was just printed on a field of silver and lose some of the look. They're also good for labels / artists going for a minimal look.
