The first person who comes to mind is Richard Devine, who has publicly
stated in interviews that he's converting his entire studio to 5.1
production. As far as I know he doesn't have anything released in 5.1
(though perhaps his commercial work for Nike utilizes it?), but that
would be one to look out for.
The other thing I would mention is that the academic side of computer
music has been involved with multi-speaker spatialization for many years
now; there have been varying levels of consistency with regards to
speaker placement, but a number of people have done work with 5.1
systems specifically. Unfortunately, I don't have a list of names off
the top of my head, since I don't know that side of thing nearly as well.
A number of the performances at SEAMUS (Society for Electroacoustic
Music in the US) this year involved multi-channel works; their site
might be a good place to look if this interests you:
