As much as I love placing people into categories, it sounds like you're enjoying more of the "post-rock" stuff. You may want to look into some Labradford stuff, although it's slower than Tortoise. A lot of the bands with pages at www.brainwashed.com covers a lot of "post-rock" material, which covers much of the "well this has elements that are similar to rock, but it's definitely not *rock* music." I've heard some really good Stars of the Lid that might be up your alley, along with Papa M or Aerial M (David Pajo). The self-titled Aerial M album (long EP?) with "Wedding Song No.2" and "Compassion for M" is particularly nice.
