There is Unity DS-1 by bitheadz.. It's a popular one, and is sworn by many industry people, but IMHO I think it's convoluted Piece of Crap. There is also Koblo, which has a Sampler, and A sampling Drum editor. Very easy to use, and very nice sounding, just kinda pricey though. My Fav's though are Reaktor and Max/msp.... You can build all kinds of crazy stuff that not even hardware samplers can do. And much much more.... (synthesis, DSP, Analysis, MIDI processing, etc..).. they are a bit tougher to use (you need to build your own DSP network), but is much more flexible, and powerful. Reaktor is quite a bit easier to digest than MAX/MSP, but MAX/MSP has more power, and is extendable with C.
