Well, it's old news, but there is the Orb's "Little Fluffy Clouds," which uses a snippet of "Electric Counterpoint." (A curious feature: Reich's 12/8 measures are transformed into 4/4 by repeating the last 4 notes of each measure (12 original notes + 4 repeated --> 16 16th-notes).)
