Well, the best program for ripping would probably be Exact Audio Copy (http://www.exactaudiocopy.de) which was written with the best possible audio extraction quality in mind. Plus, it's postcardware - you can send the author a postcard if you like it. :)

Actually, I use EAC to rip WAV-files to my harddisc and then use CDex to encode them, as it's got a nice feature to encode a whole directory tree, which EAC sadly lacks. It also comes with a recent version of LAME pre-packaged, which would be what I'd recommend to encode your MP3 files with anyway.
