Ennio Morricone is sort of the king, but you might do well to get a compilation of some sort. You'll invariably discover that everyone samples him. Like that venetian snares - dance like you're selling nails track. Bernard Herrmann is another favorite of mine. I mean... all of his shit is awesome. The Hitchcock stuff is among the best. Also, the day the earth stood still is a theremin classic hello regarding Morricone instead of a compilation I'd rather recommend getting his early 70's albums, very Cinematic Free Jazz instead of a compilation gathering some hits. My fave being "Gli Occhi Freddi Della Paura".
