the avalanches, quality samplecore in the vein of old EBN used quite a bit,
in particular for the track 'frontier psychiatrist'. mostly just
western-type samples and old western movie score stuff. snog is also pretty
well known for making things with a spagetti western feel. a good example
would be the release 'buy me i'll change your life'.
