Pan American, the always amazing Godpseed You Black Emporer, the
really-freaking-good Stars of the Lid.
and, of course, as you mentioned, Low, maybe one of the best bands
around.
props to Kranky, one of the finer labels in existence.

But I can say that there are numerous bands who have taken the
basics of "guitar, bass, drums, and singing" and done wonderful things
with them. If you drop the drums, and slow everything way down, you
get Labradford. If you drop the bass, you get Low.
Not for everyone, for sure, but definitely quality bands.
