I'm pretty sure that several of the ambient pads they use are from an Akai
wind controller synth. I have one, and I find myself duplicating many of
their sounds accidentally. Quite a few their melodies cater to the
fingering of the controller as well.
I found myself wondering how they got their sounds as well. It was quite
satisfying to find a piece of gear that helped solve the mystery!
