If you haven't already, check Josh's tracks on his web site (given below) In particular the live stuff is good, not only because it's cool music, but because it was apparently recorded with an open microphone for crowd noise. I plan on sampling some of the crowd noise for my own tracks ;-) Seriously though, having all the clattering silverware, people blabbing really becomes part of the texture of the recording.
