Check out Voquette, that'll let you schedule recordings of audio into a .wma file. Unfortunately the .wma file is fingerprinted such that you can only play the file on the computer that made the recording. If, like me, you want to be able to play the file on other computers, you can convert the file to a .wav using Total Recorder (I think I found this on mp3.com's site), then rip to mp3 with any ripper that's out there. Or, if you're not trying to record some late-night-so-I'm-asleep broadcast, you can use Total Recorder right off the bat. Basically it acts as a sound card and writes the audio data to disk. Launch it, hit record, then launch the real stream you want to duplicate. Enjoy! (And yes, this took a while to figure out!)
