I would recommend Octamed Sound Studio on PC.
I dunno if the PC version is out yet, but the Amiga version has been out for
quite some time. OSS is a full midi-sequencer that uses the method of
inputting music that the trackers (fast tracker, impulse tracker,
screamtracker, etc.) use, which I have found to be WAY easier than the
popular sequencers (CuBase, Performer, Cakewalk, etc.)
